Food&wine in Apulia is certainly an important part of the cultural heritage. For foodies a stay in Apulia turns into an unforgettable and “tasty“ experience. The traditional recipes are jealously guarded to create typical dishes made of simple ingredients, produces coming from the land and the sea. Once you are in Apulia you can´t miss the dish that is now a symbol of this region: “orecchiette” (a kind of pasta) with turnip tops, seasoned with olive oil, anchovies and cherry tomatoes. Very important are the dairy and bakery products, such as the little-hot “ricotta forte“ and many other cheese or the PDO Altamura bread, with its unmistakable yellow colour due to the wheat flour. Apulia is the land of hundred-year-old olive trees, hence the best PDO olive oils are here and they´re exported all over the world. Apulia is also one of the most important wine-producing region: Locorotondo DOC, Primitivo di Manduria, Salice Salentino, Aleatico, Negroamaro... those are just some of the best wine you can taste in Apulia. Furthermore the sea offers lots of tasty products as mussels (Varano and Taranto are the most important mussel farming places), octopus and much more. As for dessert maybe the best period is Christmas, when everybody is busy in preparing lots of typical “cartellate“ (fried flaky pastry covered with “vincotto“, a sort of cooked wine), “pettole“ (fried leavened dough covered with salt or sugar), “mostaccioli“ (almond sweets with honey, cinnamon, lemon and covered with glaze chocolate). The best way to enjoy and taste the savours of Apulia is a stay in a “masseria“ (fortified farm) or an “agriturismo“ (farm offering local or own produce), country and simple farms, but also places where tradition and luxury are perfectly joined together.
